Orrawa
Orrawa, a former hay farm near Tarvastu, has been the birthplace of original ideas for as long as written records can be found. It was there that the vodka rivers of St Petersburg were gathered, and where Johan Lagos wrote the most turbulent chapters of Kalevipo's battle with the Scythians and his journey to the end of the world.
Today's ideas are more lenient.
For Orrawa's birch syrup, sap is collected from the bottom of the former Lake Võrtsjärv, which continues to be flooded in spring. Water is extracted from the sap: 1 litre of syrup requires over 120 litres of birch sap. Part of the syrup is refined with medicinal herbs. The weather during the juice collection season determines the annual quantity: 100-130 litres.
Outside of the sap season, the farmer has turned his attention to the most common business idea among Estonians, which, according to the Tax Board, is the production of tree sap. To start with, instead of birch wood, they have chosen a noble, hardy and well-preserved olive tree, which arrives in Orrawa from Crete. In between the spoon rolling, cutting boards and pan ladles are cut and sanded, bowls are turned, offerings are made, and so on. The olive wood is also refined, adding colour and brightness with resin.
